    I was wondering: how would one go about building the most reliable car?

    I mean, auto-makers sometimes just buy their engines and other parts from specific companies and assemble the parts under their own logo, so why should the average guy not be able to do that also?

    Begin with a chassis: anything works, as they don't really have moving, malfunction prone parts. Get anything and just rust-proof it properly.

    This is what your car will look like.

    Pros: Light weight, you only really need 120 HP to have fun, all body panels are still manufactured, replacement no problem, good styling, big enough for most.
    Cons: safety? Ehm... no.

    Engines...

    The original Ford was reliable for the time. But that time was 1968, and now is 2019. We got internet and phones that are smarter than our politicians. 1968 reliability simply won't cut it.

    We could just insert a Toyota 3ZR-FAE 2.0 L, like the RAV4, good for 140 HP. Enough. Mated with a 6 speed manual. Should be fun. Or some archaic automatic. Toyotas have them covered. Anything but a CVT. That's sanskrit for "mechanic retirement fund."
    There's a 2.5 version that has more output, and known to be perfectly reliable. Toyotas have a timing chain. One shouldn't need to open the hood much.

    Or a Fiat Multijet II diesel. We need somesort of an automatic transmission on that. Opting for the less powerful 2 liter, we won't really need a Lincoln transmission, but with the 2.5 we will need one of those rather desperately. Or a Mercedes Benz automatic from the W123. Either way, that power and a car that small will mean drifting around corners. With a diesel. A super reliable diesel.
