Why we don't already have a thread like this (that I could find), I have no idea. Anyway, tell me some good manga to read :P

I mostly like manga with demons, foxgirls and/or, dragons. I also prefer manga that does NOT have an anime adaption (yet)

80% of BERSERK does not have an animu adaptation. The anime that does exist only covers the "prologue" plot and does not even cover most of that fully due to censoring and budget. Later in the series, it has so many demons, dragons, monster-girls, demon-dragons, demon-girls, that you can hardly count them all. No Foxgirls from what I remember though.
It's art style and writing is also damn good as well, and the monster designs are amazing...as I have said before Berserk is my favorite Seinen Manga.

I might also recommend some more...Lovecraftian Horror in the spirit of the season:
Uzumaki and Hellstar Remina has no foxgirls or dragons, but it has some "demons" alright...if you consider eldritch horror DEMONS.

I'll just give you a quick, bastardized description of some ones I've been reading. I'll put them in order of what you're looking for, to me just bringing up crap I like.

Blaster Knuckle - If you've seen or read Berserk, you know what to expect. Well, sort of. This is the story of a former boxer fighting KKK members. The twist: the Klansmen are actually demons disguised as humans.

Franken Fran - A girl cuts people up to make them happy.

Kamen Rider Spirits - Guys in rubber suits kicking guys in dirtier looking rubber suits

MegaMan ZX - This is by no means a masterpiece, but it was fairly entertaining. You'd probably enjoy it more if you've played the game.

The Five Star Stories - Knights that battle in giant robots with the assistance of female co-pilots.

Onani Master Kurosawa is pretty good. The premise is indeed awkward; however, the story itself is solid with some nice development between the characters. The art is generic and leaves something to be desired; however, the art - despite its flaws- does have a certain trait about that I find enjoyable, though I can't place my finger on said trait. Unfortunately, it isn't a fantasy - like your implications specified.

Now, in terms of light-hearted fantasy, I would highly recommend Yumekui Merry. To start off, the character designs are fantastic and I'm sure you'll find a design in there that will pique your interests. The characters (and story) are also notable in that, yeah, it is technically a harem, but it isn't forced on you. The girls actually grow onto the character and never make their crush known in public or to the main character. While on the topic of characters, they are all a likeable and charismatic bunch - including the villains. Whether it be John Doe and his cat-girl army or Merry's bro-ness, you'll grow attached to this cast. The art starts off pretty well, but not astounding. It wouldn't be until the creator made the designs a bit more older - so to speak - that we got the art that we have today, which is incredibly stylistic and "juicy." Indeed, it did get an adaptation; however, the director did a mediocre job and didn't "adapt" the manga, so much as he just directed a show that followed the plot - thus abandoning the style. The anime also went to an original ending, and - despite having great villain designs (Mystelltainn's design is beautiful)- the show just fell apart.

Obligatory:
Berserk's art is fantabulous and the story ain't too shabby, either.
Franken Fran if you are into the spooky, Halloween fell with moe... and some other things.
If you are into Cyberpunk, then read anything by Tsutomo Nihei
JoJo's Bizarre Adventure is probably the pinnacle of shounen (with the exceptions of Steel Ball Run, which was not shounen, and Vento Arouro, which was really bland.)
Mobile Suit Gundam: The Plot to Assassinate Gihren is probably the best piece of Gundam manga, and one of the best military drama-themed manga.
aaand all of Getter Robo.

My favorite manga is the World God Only Knows, but I question that it would fit into your tastes. It has non-traditional demons, a dragon, and many other things. I has an anime adaption, but like the previously mentioned Beserk manga the manga doesn't really get into the meat of the story. The World God Only Knows is a harem with an intelligent protagonist who saves girls and eventually the world from super natural forces with the help of his good demon buddy.

How does it compare to the anime? I've watched the anime already, and I did enjoy that.

Negima

A lot of the problems I had with the anime wouldn't exist in the manga (the music! the horrible soundtrack! Dx), so I may give this one a try.

I don't like all the blood the anime has :\. Does the manga suffer from the same problem?

Regardless, I may actually be able to handle it better in black and white xP

Well, Haar. My Manga is pretty limited and I don't think any of it is what you're looking for but for the entertainment value, here goes:

Trigun: (Which I know you've already read) The first 2 volumes, upon which the anime is based. I found it a little annoying because I saw the anime first. In the manga,
all the characters look like Vash with different hair. Other than that, pretty good read.

Excel Saga: Vols 1-7. Same characters, different stories. No Pedro. No Nabeshin. Funny.

Evangelion - Campus Apocalypse: Alternate storyline. Instead of big EVAs, small spheres that morph into anti-angel weapons. Shinji has a pistol. Rei has a lance
and Asuka has a whip (naturally), And Gendo is still a dick. Set at NERV academy.

Death Note: Vols 1-3. Pretty much the printed version of the anime.

Soul Eater: Vol 1. Drawn well. A little more almost-nudity.

E's otherwise: Have it, but haven't read it yet. Came in the box with my Excel books when I bought Vols 1-6 on Amazon.

Pretty pathetic library, I know.....

Oh god, I read that as "Shinji has a pistol. Rei has a lance
and Asuka has a whip (naturally), And Gendo HAS a..."

The World God Only Knows Anime I + II is alright, a few laughs, but they try to end each season with some strange metaphoric stuff, Elise becomes a character who's there, nothing else (she does stuff, but she's more a background assistant with maybe 2 episodes where she gets a bigger role). From what I understand the Manga goes on to releasing Goddesses.

^ Aren't they releasing Berserk movies to cover the WHOLE manga story, now that the manga guy is getting close to finished -or finished -or whatever? Or was I wrong?

If you want one that doesn't have an anime adaptation yet, try
Noblesse... It's actually a Manhwa about a race of superhumans called Nobles, whose duty it is, or was, to protect humanity, and the human Union that they oppose,
Psyren, a manga about humans with psychic powers that get called to the future to prevent the world from being destroyed in the future,
The Disappearance of Nagato Yuki-chan, a spinoff of Disappearance of Haruhi Suzumiya, largely a romantic comedy between Yuki and Kyon,
Tonari no Seki-kun, a school life manga with a strange twist,
Onihime, a manga about a boy who is about to commit suicide, and instead sells his heart to demons, and he drinks a concoction that strengthens his heart over the year so that it is suitable for consumption. In that year, two demon princesses serve him and protect him.
Those are the ones I could think of.

Franken Fran - A girl cuts people up to make them happy.

... Also, ignore the gore and you've got yourself some of the best dark humor you'll be seeing in a long time...

Well, since Back and Haar already covered most of my favorites and most recommendable, I'll have to show off some more obscure ones...

If you wanna get into Franken Fran, but are still pretty unsure about all this talk about its "dark humor", or if you already checked Franken Fran out and feel like you want more of it, check out Nickelodeon or any other work by that author (I already covered those in "Zuii's anime reviews" with a half-assed recommendation, so I won't waste much time telling you what's it about...), as they also occasionally have a similar kind of humor (although Franken Fran's is probably more 'extreme', while Douman Seiman's a bit more toned down...) Also, if you're feeling up for a weird "non-standard demon girls story", there's a bit of that in "Vovnich Hotel", always by Douman Seiman...

If you've instead already checked out Franken Fran and have managed fine with the gore and occasional nudity, by all accounts read one of our Guts' manga, "Jigokuren - Love in Hell" for a bit more hot non-standard demon girl action...

Also, by all accounts, read Yumekui Merry... I think Backmask already covered most of it's strong points (he got me into it, after all...), so I guess that the only extra thing that I can tell you is; seriously, read it... Also, if you're into Touhou, you might wanna check out some of the doujinshi the author drew as well, if you enjoyed Merry (I'm pretty sure you can get it from here (http://touhou.wikia.com/wiki/One_Night_Stand)...)

Maybe I'll add a few other interesting manga from my own collection as well later on...

Even though it's not yet finish (by my knowledge) a good zombie manga is "Apocalypse no Toride," a manga that seems to get out of hand from the very beginning. The zombies' art isn't the best, but I must say that for a manga drawn by one man over a span of three years it's pretty well executed. It's about teenage convicts fighting to survive in a suddenly dead and even more deadly world. Drew me in with the word zombies in the description, but it has more than that. By the way, my collection includes Hellsing, some old Urusei volumes, a one-off Zombie manga called Living Dead! (Great humour in it), and almost half of the Freezing volumes.
