I watched Haruhi ( must have forgotten to put it on the list)
I liked the light novels better (though I am still waiting for the next volume)

Outlaw Star or Trigun might be a good next choice.

Edit: You could also watch the Hellsing OVAs that've been put out so far. I'd suggest staying away from the anime though, it doesn't compare.

Trigun's okay. It's got an awesome soundtrack and good plot and it's pretty humorous as well.

It's weird. your list of stuff is almost exactly the same as what i've watched. it's kinda creepy actually.

Moribito would be a good choice. A spear wielding woman protects this run away prince from the bad people. Pretty good story, nice fights, and good animation. And maybe try Sword of the Stranger if you're fine with just watching a movie. Absolutely amazing battles and basically the same story as Moribito. And try Spice and Wolf.
