Well, I suppose Cowboy Bebop's soundtrack is a fairly common one, but to be fair, I actually listen to it on my own time alongside "mainstream" music (e.g. Neil Young, Pink Floyd, Feist, Bob Dylan and the other stuff I listen to). Mai Yamane's voice sends shivers up my spine, as do Yoko Kanno's rhythm tracks.

Beyond that, I love NGE's original version of "Fly Me To The Moon" (not the awful Engrish versions, mind you, but the one they play in the first 4 episodes).

Bokurano's soundtrack is superb, as are its opening and ending themes.

And I'm a complete Joe Hishaishi junkie; I've listened to the soundtrack from "Castle in the Sky" more times than I can count.

From the OP, the ED, the BGM, insert themes, character songs, the Madoka Magica OST is just quality music and sound from start to finish. This, gentlemen, is how an anime SHOULD handle it's music.
(Also the new Kyoko + Sayaka duet is AMAZING as well... not just for the les-yay)

Other OST's I like include the Higurashi no Naku Koro Ni OST's anime OR sound novels, they both have awesome music. Naruko No Hana *Kai's OP* is in the list of my top ten favorite songs... from any artist, in ANY language. The character songs, BGM and insert themes are pretty good too.

Magia's really good. The Instrumental version "Witch" is pretty ****ing sweet as well. So is Venari Strigas.

As for other songs:
The OP "Connect" is really ****ing catchy, the vocal less reprisal called "end" is saddening, although a good ending song to the series.
Mami's Theme, dear god, Mami's theme, official version or the Nico-nico douga version.
"See You Tommorow" is a sad little song, and downright gut wrenching if you understand the lyrics and have seen the anime.
"And I'm Home" has good beat, vocals, lyrics, and the Les Yay. Dear god, the Les yay!
All of the BGM's including Sis Puella Magi and Salve Terrae Magicae are gold. Its not often I go out and get BGM for my Mp3... that's how ****ing good it is.

Well, the soundtrack is one of the few good things about Madoka. However, any soundtrack that has Yuki Kajiura is destined to be good.

Anywho, my favorite OST is probably Karas's. However, Berserk, Neon Genesis Evangelion, Gurren Lagann, Panty and Stocking with Garterbelt, and Darker than Black's OSTsare close runner-ups.

Only anime OST as a whole that I ever liked was death note's OST. 95% of that anime's BGM's is all electric guitar instrumentals, Loved every bit of it.

Mine would have to be the Mushi-shi OST, which I was actually listening to last night. It's always makes me chill out and feel really at peace. In fact, the soundtrack is half the reason why Mushi is my favorite show.

And the only other one I can think of at the moment is Air Gear. And I'm listening to that right now :D. The music is just so funky!!! It fits perfectly with the type of show Air Gear was supposed to be!

I am kind of biased for the Blood+ ost because one of my favorite songs is on there This Love by Angela Aki but there are some other good ones there

Just to name some that others haven't yet...

I loved the Fate/Stay Night OST.
The OP and ED were great imo, as well as a track "La Sola".
I also really liked there version of Mozarts "Lacrimosa dies illa".
I guess I'm a bit of a fan of some dark opera type songs.

I also really liked the Elfen Lied OST.
And not only for Lilium, but I like almost all of the OST.
To name a few other specific tracks, "Yakusoku", "Shinkai", "Ametsuyu".

I also liked the School Days OST.
Some of the songs on there kept me watching the show til the end.
A lot of good vocal songs such as, "Namida no Riyuu" and "Usotsuki".
