I made some chili last night, and it was pretty good, but all I could really taste was the heat. Recipe below for reference. Anyway, I'm looking for advice on what other spices I could add to give it some more flavor to go with the heat.
1 garlic, chopped
1 onion, chopped
~1/ - 3/4 cup thai peppers, chopped
2 lb ground chuck
1 can tomato sauce
1 can black beans
~1 teaspoon cumin
` 1/2 teaspoon black pepper
pinch of seasoned salt

If available, add chili peppers. I can't remember my dad's recipe completely, but you're pretty close. Spicy peppers should do the trick.

Use less thai peppers (by about half) replace those with Chili Peppers (Ancho or Poblano are best. A mexican specialty store will probably have them They are exceptionally easy to grow and dry yourself as well), either dried or fresh. Use 3 per pound.
you have garlic and cumin already, maybe kick up those amounts a bit.
Try using red onions (as opposed to the usual white or yellow) they tend to be a bit tangy-er.
Use fresh garlic if you can, it will be better.
After you have the main chili flavor and you want MORE heat, then add your hothothot peppers, Thai peppers or a spicy chili pepper (anaheim, or habanero or cayenne)
Here's a really good referrence for All-out chili: http://www.bennett.com/chili.html

Spicy italian sausage

Different beans e.g. white kidney beans
More tomato paste

My dad (the family chef) is wondering what you can taste over the Thai peppers.

That was the problem with that batch. I was pretty much just getting heat. Although, the next day most of the heat had dissipated for some reason. I guess the thai's essence has a short half-life once it's been cooked. I haven't made another batch since, but I could necro the thread when I do (I'll be altering the recipe again).

Add some hay, and carbon paper.
baste the hay with soda, and saute the carbon paper with green olives.

Coincidentilly I did chili again tonight. No thai this time, instead it was 3 diced jalepenos (fairly big ones) and 3 habeneros sliced in half and seeded. After forgetting to chop all the veggies before I started the meat and almost burning my nuts off with trace amounts of habenero juice it ended up tasting pretty good this time. I added a bit more cumin than last time, plus some seasoned salt. Oh and ten chocolate chips.
Just noticed I forgot about the beans as well. Probably because I was busy trying to extinguish the fire down below.
